Black and white Photography is a favorite with nearly everyone. Ironically enough one of the biggest stages of progression in cameras was when color cameras became available at consumer price level.
Fast forward to this generation and we want to change everything back to black and white. Of course nothing in the digital age is shot and black and white, it's shot in color and then turned back to black and white in the editing process, giving you 2 options instead of one.
Black and white photo edits always bring a nostalgic theme to a Photograph. Something about the way the shadows look and the contrast in detail makes them stand out from the rest. Once the Photographs are turned into black and white it seems to remind clients of other older Photographs they have seen, maybe of family before them.
Vignettes also work really well on black and white Photography, representing the older technology of cameras even more (when vignetting was unavoidable). It's seems ironic that even when we have moved past older camera technology to more effective Wedding Photography cameras we still crave the nostalgic and older looks.
